Tasty dinner the other night consisted of:
Tilapia with cumin, green onion, lime, a little salt and pepper. Bake at 350 F on baking pan sprayed with PAM for about 1/2 an hour. I used cumin seed and ground it up in a mortar and pestle which had a nice fresh taste. I also put a little squeeze of fresh lime juice just before serving.
Also had:
A whole butternut squash peeled and cubed, toss with curry (1 tsp), paprika, (1tsp), basil (1tsp), turmeric (1/2 tsp). a little pepper. All seasonings can be done to your taste. Cut up 2 fresh tomatoes and mix with the squash cubes. Put on prepared baking sheet and bake at 375 F or until soft. Yummy.
